Our Story

Barrel & Brü Tap House opened its doors on November 14th, 2022, driven by the passion and vision of founder Aaron Coleman. Aaron, born in Maryville and now living in Belleville, spent years moving across the country, where he opened three Lucky Jacks gaming rooms. While working as an engineer for Ameren, Aaron always dreamed of being his own boss. To make that dream a reality, he sold the gaming rooms to raise the capital needed to open Barrel and Brü.

Aaron’s passion for craft beer began nearly 15 years ago when he started experimenting with home brewing. What began as a casual interest turned into a deep love for the craft beer scene. A decade ago, Aaron shared his dream of opening a bar with Brad Ziegler, who was bartending at a group called “beer church” that Aaron frequently visited. What started as a casual conversation quickly turned into reality, just two years ago, when Aaron invited Brad to become Barrel and Brü’s General Manager. With Brad’s 17 years of restaurant experience and Aaron’s consumer-side knowledge, they have crafted a space that combines community, culture, and a shared love for craft beer.

In the kitchen, Assistant General Manager and Kitchen Manager Fontez Merrifield brings years of culinary expertise, having worked his way up from dish pit to chef at popular local spots. Fontez’s creativity and love for Italian cooking shine through in the elevated bar food menu that’s always fresh and exciting.

Together, Aaron, Brad, and Fontez have created a space that’s more than just a bar, it’s a place to gather, enjoy great beer, and celebrate local flavors.
